Quick and Healthy Lo Mein Recipe with Barilla White Fiber Pasta

I love pasta.  It’s really that simple.  When I was a kid, I loved the noodle soups my mom would make on lazy Saturdays.  In college, I lived through the usual ramen noodle diet, except that habit didn’t go away after I graduated.  After I met Drew, we learned to make some pretty durn good pasta dishes, like spaghetti, seafood pasta, gourmet mac & cheese, pad thai, and lo mein.  Sometimes, it’s just pasta tossed with EVOO and garlic and butter!

You might say that eating all this pasta is probably not good for me, with all its carbs and whatnot, but I don’t really care.  Just watch me house a plate of spaghetti or a large bowl of ramen!  Plus, I like to buy pastas that add a little extra beyond just gluten, which is why I really enjoyed using Barilla’s Better for You White Fiber Pasta.  I mean, who wouldn’t want a little extra fiber in their diet?  And the best part is, Barilla’s Better for You pastas are available at my local, on the way home from daycare, Stop & Shop grocery store.  So, I pick up the little man, stop by the grocery store, pick up the usual supply of milk, eggs, bread, fruit, snacks and boxes of pasta.  Then we head home to raid the fridge and figure out what’s for dinner.

With the glut of vegetables we get every week from the farm, we usually like to make something that incorporates at least a few vegetables, just to kind of keep up and not drown under a pile of carrots.  A lo mein stir-fry is a great way to use up a bunch of veggies and have a quick dinner on the table after work.  And of course, using healthy pasta makes this veggie-heavy meal just that much healthier!  So, I’m sharing my lo mein recipe today, such as it is.  I’ll use the term “recipe” pretty loosely here, since this lo mein is just a one pot wonder with whatever you’ve got and seasoned to taste.

Quick and Healthy Lomein Stir-Fry

1. Grab your ingredients.  On this particular day, I used:

  • Barilla’s Better for You White Fiber Pasta, cooked according to instructions on box.  I used 3/4 box for this recipe.
  • 1 package of frozen shrimp, thawed
  • 1 carrot
  • 1 small daikon radish
  • 1 medium onion
  • 2 red peppers
  • a few leaves of bok choy, leaves only
  • 1 clove garlic, diced
  • 2 tbsp + 4 tbsp (ish) soy sauce
  • 1 tbsp honey
  • vegetable oil
  • salt and pepper

2.  Peel shrimp, tail and all.

3. Combine 2 tbsp soy sauce, 1 tbsp honey, clove of garlic and peeled shrimp in a bowl.  Mix well and let sit for 5-10 minutes.

4. Chop bok choy, slice the onion, and julienne the carrots, peppers and daikon radish.

5. Heat wok or pan.  Add 2 tbsp of vegetable oil to heated pan.

6. Quickly stir-fry the shrimp with marinade until just cooked through.  Remove the shrimp from the pan and set aside, leaving the rest of the marinade in the pan.

7. Add all vegetables except the bok choy, and stir-fry until mostly soft.  Then add the bok choy, as it wilts quickly.

8. Add in cooked pasta and toss.  This is when you’ll need to add in extra soy sauce and vegetable oil to keep things coated, as well as to add desired flavor.

9. Add in shrimp and toss to integrate everything together.

10. Add salt and pepper as needed to taste.

This lo mein is easy to make, and can be made in just about any way you want, with whatever you have on hand.  I liked that Barilla’s White Fiber pasta didn’t affect the taste at all, as some whole wheat pastas sometimes do, and it makes a healthy recipe just a little bit healthier!
