It’s time for the second installment of my Hidden Veggies Roundup – recipes, ideas and inspiration on how to hide vegetables in different meals for those picky eaters in your lives.  If you haven’t done so, go and check out last week’s Roundup and get inspired by some ways of hiding vegetables in popsicles.  This week, we’ll take a look to see how to hide vegetables while making delicious and colorful smoothies!

For those of you in the northern hemisphere, it’s summertime, with abundant fruits and vegetables available at farmer’s markets and supermarkets.  These recipes all call for pretty common ingredients and the combinations are so creative and beautiful.  Who knows, if your farm stand sells organic produce, your whole smoothie can be completely organic. Farm to table, anyone?

I’m not sure why I don’t make smoothies all the time, but after just putting this roundup together, I’m feeling the urge to pull out the blender.  And maybe not put it away until wintertime.  I love how all the fruit in these combinations really cover up the taste of the vegetables, but you get all the nutrition of both fruits and vegetables because the ingredients aren’t overcooked or steamed flat.  Plus, they all look so easy!  Blender + ingredients = healthy snack -> can’t beat that!

I know, I know, I even squeezed my own recipe in here.  Behold the power of honey in convincing a kid to overlook the fact that what he’s drinking is green.  Although I have no idea if he’d drink it now, since he seems to be allergic to the color green.
